In the past we have already made many researches on the role of copper in the distillation process and on the final quality of the alcohol produced by the plant. We have always been very interested in this subject because in many spirit production processes , like Schotch preparation or Raki preparation, copper is considered as fundamental for its capability in giving to the final alcohol a quality taste.
In order to understand deeper and deeper every aspect of the role of copper in alcohol taste we made several researches on this subject. The last one is under progress thanks to the efforts of the young Elisa Giunti, a student from University of Pisa, that choose to work with Green Engineering on this subject to prepare her final thesis. Elisa works with the collaboration of Professor Cini of University of Siena and Luca Cervi from Green Engineering. The following photo shows Elisa during some labs test on alcohol.

In these days Elisa is finishing the experimental phase of her research and would like to celebrate by eating with us the famous "paste di staggia" , typical cakes made in a little town (Staggia) near our headquarters. We would like to thank Elisa for giving us the opportunity to taste these wonderful cakes !
